Ingredients:
Ground Beef: 3 lbs.
Ground Pork: 2lbs.
Ground Veal: 1 lb.
(Or buy 6 lbs of an unseasoned meatloaf mix)
Bread Crumbs: 1 cup.
Pecorino Romano: 1 1/2 cups (grated or shredded).
Onions: 1 cup (finely chopped).
Garlic: 3 cloves or to taste (crushed and minced).
Fresh Parsley: 1/2 cup (chopped).
Fresh Basil: 1/4 cup (chopped).
Dried Italian Seasoning: 2 Tbs or to taste.
Salt: 1 tsp.
Fresh Ground Pepper: 1/2 tsp.
Eggs: 7 -12 large
Flour
Olive oil
Steps:
Mix all ingredients but meat, eggs, and olive oil. Add ground meat and mix well, but lightly. Lightly whisk eggs and mix into mixture. Form into medium sized meatballs (slightly larger than a golf ball) and dredge in flour. Brown all over in olive oil. Put browned meatballs into sauce. Deglaze pan with water, broth, or
wine and pour drippings into sauce. Makes about 40 meatballs.
